Tips On How To Get Fluffy Biscuits
Use Cold Butter
One of the most important ingredients for achieving fluffy biscuits is butter, but the butter NEEDS to be cold! Butter creates pockets of steam when it melts, which helps the dough to rise and results in light and airy biscuits.
When making biscuits the butter must stay as cold as possible until they go in the oven. Use a cheese grater to grate cold cheese into the dough or a pastry cutter to cut the butter into the dough. If you are using your hands to mix and incorporate the dough be careful to mix the dough quickly and touch it as little as possible.
Use Cold Milk

Brushing unbaked biscuits with butter will add a little extra fat on top and will give them an extra boost of moisture and flavor.
You can also wait and brush butter on the biscuits after they have baked. This will result in a softer outside on the biscuit and will help the biscuit from drying out.
Bake At A High Temperature
