1lbchicken breast - cut in half lengthwise (butterflied)
1lbbowtie pasta
2tbspminced garlic
1 medium onion - diced
3cupspinach- washed and dried
2cup cherry tomatoes- washed and dried
1½cupheavy cream
1tsp seasoning salt
1tsporegano
1tsppaprika
1tspsalt
½tspblack pepper
olive oil - for cooking the chicken in.
Instructions
In a pot of boiling water add pasta and begin cooking it as directed. Drain and set aside when finished cooking.
In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts generously with seasoning salt, oregano, and paprika. (You do not need to measure out the seasoning you are seasoning the chicken with. Just generously season them. We will add measured out seasonings later in the recipe.) Sear them in the skillet until they are browned on both sides. Once seared remove from the skillet and set aside. It is okay if they are not cooked all the way through we will add them back in to finish cooking soon.
In the same skillet, add the minced garlic and diced onion. Cook until softened and fragrant.
Add the paprika, oregano, seasoning salt, black pepper, salt, heavy cream, tomatoes, and spinach to the skillet. Over low to medium heat allow the spinach to begin cooking down for 5 minutes. Once the spinach has cooked down slightly add the chicken back ontop of the mixture. Cover with the lid and allow to continue cooking over low to medium heat for 10 minutes or until the chicken is fully cooked.
You can either mix the pasta in with the sauce or you can plate the pasta and pour the sauce onto the pasta and top with a piece of chicken. Season with additional salt and pepper if needed.
Notes
How to Reheat Bowtie Chicken Pasta Leftovers
Stovetop
If reheating on the stove place the chicken pasta in a pot with a lid, along with 1/4 cup of heavy cream. Depending on the amount of leftovers you are reheating you may need to add more heavy cream or less. The heavy cream is going to prevent the pasta from drying out. Over medium to low heat slowly begin heating up the food. Stir occasionally until it is thoroughly heated.
Microwave
If reheating in the microwave ensure the chicken pasta is in a microwave-safe bowl. Add a couple of tablespoons of heavy cream. Depending on how much pasta you are reheating you may need to add more or less heavy cream. Heat the food up in 30-second intervals stirring in between each 30 seconds. Continue doing so until the food is heated thoroughly.
