4 peaches - Peeled, pitted, and sliced (Approximately 4 cups of peaches)
⅓cup brown sugar
3tbspwhole wheat einkorn flour
1tspvanilla
pinchof salt
Crisp Topping
¾cup whole wheat einkorn flour
½cupbrown sugar
1tspcinnamon
½cupbutter (melted)
¾cupsprouted rolled oats - If you do not have sprouted oats you can substitute with old fashioned rolled oats.
Instructions
Making the Filling
Preheat your oven to 375°F.
Start by prepping your peaches by peeling, removing the pit, and slicing them. Add them to the mixing bowl and add the brown sugar, einkorn flour, vanilla, and salt. Mix until the peaches are evenly coated.
Pour the coated peaches into the pie plate and set to the side.
Making the Crisp Topping
In a mixing bowl add the einkorn flour, brown sugar, cinnamon, and rolled oats. Mix until all the dry ingredients are thoroughly combined.
Next pour the melted butter into the dry ingredients. Using a fork mix until the crumble topping is thoroughly combined.
Using a fork or a spoon begin spooning the crumble topping onto the peaches. Repeat this until all the crumble topping is covering the peaches.
Bake at 375° for 45 minutes or until the peach filling is bubbling and the crumble topping is golden brown and crispy.
