Even though we are in the middle of winter here on the farm we are still getting a ton of eggs. Our chickens are free range so they have beautiful dark yolks. We hate to waste eggs so we try and think of different ways to use them but one of our favorite ways is in dill pickle egg salad. Egg salad is completely customizable to your family’s likes. You can substitute dill pickles with sweet pickles or sweet relish such as bread and butter or sweet gherkins to get a sweeter egg salad.
