  • Avocado oil – I prefer the taste and health benefits of avocado oil but you can also substitute with extra virgin olive oil, canola, or even vegetable. Note that changing the oil or any other ingredient may alter the taste.
  • Egg – The egg needs to be a room temperature egg and preferably a farm fresh egg.
  • Mustard – I use regular yellow mustard but you can also use dijon mustard.
  • Lemon juice – It does not have to be fresh squeezed lemon juice but It does need to be 100% lemon juice.
  • Salt – Use whatever salt you prefer. I like to use Redmond Real Salt.

How To Make Homemade Avocado Oil Mayonnaise Recipe

In your mason jar add your ingredients starting with the egg. (Use the entire egg not just the egg yolks.) Next add all other ingredients. Making sure that the egg is the first thing added to the jar is key.

Put the egg in first so it is at the bottom of the jar. It should look something like this.

Using the immersion blender put the blender head all the way at the bottom of the jar. Mix on high without moving the blender until the egg turns white.

Once the egg is white slowly start incorporating all the other ingredients. Continue mixing until it is thoroughly combined.
