Raw milk, also known as unpasteurized milk, has been a source of controversy and debate in recent years. While some advocate for its consumption due to the numerous health benefits it is believed to possess, others argue that it can pose serious risks. In this article we will discuss some of its benefits as well as proper storage and how long it last.

Raw vs. Pasteurized Milk

What is Raw Milk?

It is unpasteurized milk (meaning it hasn’t been heated to kill bacteria) that comes straight from a cow, goat, or sheep. It has become increasingly popular in recent years due to its health benefits and bold taste.

What is Pasteurized Milk

Pasteurized milk refers to cow’s milk that has undergone heat treatment to eliminate harmful bacteria.

How Long Raw Milk Last in Fridge

The shelf life of milk can vary depending on several factors such as temperature, storage conditions, and initial bacterial load. On average, raw milk can last anywhere from 7-10 days (sometimes up to two weeks) when kept in the refrigerator at a temperature of 40°F or below. Some raw dairy products such as raw butter, sour cream,  and cheeses can last longer than milk if they are stored properly.

How to Tell if Raw Milk is Bad

It’s worth mentioning that there are no hard-and-fast rules for determining whether milk has gone bad. The best way to tell if your milk has spoiled is by using your senses – smell, taste, and sight.

Spoiled raw milk often develops a sour odor and flavor similar to yogurt or cheese. You may also notice curdled chunks or clumps forming in the liquid. If you detect any of these signs or suspect that your milk has been contaminated with harmful bacteria (which can cause serious illness), it’s best to discard it immediately.

How to Store Fresh Milk

Store milk in an airtight container (I like to use glass gallon jars) Fresh milk should be refrigerated to prevent premature spoiling.

How to Freeze Raw Milk

I prefer to use a glass mason jar, either quart or half gallon. When you are filling the jar make sure you only fill the jar about 3/4 of the way with milk. As when freezing any liquid it expands. If there is too much liquid it will cause the jar to bust so make sure to leave ample headspace.
