Easy One Pot Cheesy Taco Rice

Equipment
- Dutch oven or Deep pan with lid – Whatever you decide to use to make this recipe it MUST have a lid. The lid will help retain heat and moisture to ensure the rice cooks properly. Here is a link to the Dutch oven I used.

Ingredients
- Ground beef – is the protein source in this dish.
- Taco seasoning – is the main seasoning used in this dish along with minced garlic and onion.
- Green chilies – are going to bring a tad bit of heat along with delicious flavor.

How to Make One Pot Cheesy Taco Rice
1. Preheat a shallow pot on the stovetop over medium heat.
2. Once preheated add the ground beef, finely chopped onion, minced garlic, and taco seasoning. Cook until the ground beef is fully cooked and browned.
3. Add the tomato sauce, beef broth, green chilies, and rinsed rice. Mix thoroughly ensuring the rice is completely submerged in the liquid. Place the lid on the pot and over low to medium heat allow to cook for 40 minutes stirring every 10 minutes. Preheat oven to 425°F.
4. Once the rice is cooked and absorbed the excess liquid remove the lid from the pot. Sprinkle the shredded cheese to cover the top of the taco rice mixture. Place the pot in the oven for 5 minutes or until the cheese is melted.
5. Allow to rest for 5 – 10 minutes before serving.
Notes
- If you want the cheese to be golden brown turn the broiler on your oven and allow to broil for 2 – 3 minutes or until golden brown.
Storage
You can store any leftovers in the pan or dutch oven it was cooked in or in an airtight container. Leftovers should be stored in the refrigerator. If stored properly leftovers will last for 3 – 5 days. For optimal freshness, they should be eaten in 1 – 3 days.
Reheating
- Stovetop – Place the Dutch oven or pan on the stovetop over low to medium heat stirring frequently. Add a few tablespoons of water as needed to prevent the dish from drying out. Cook until heated evenly.
- Microwave – Place the leftovers in a microwave-safe dish. Add 1 – 2 tablespoons of water if needed to prevent the taco bake from drying out while reheating. Heat in 30-second intervals stirring in between each 30 seconds to ensure it heats evenly.
How to Serve One Pot Cheesy Taco Rice
- On its own – It is delicious and served on its own topped with some sour cream or even some avocado or guacamole will take it to the next level.
- Over tortilla chips – This one-pot cheesy taco rice pairs perfectly with tortilla chips. Simply lay down a bed or tortilla chips place the mixture over top and enjoy.
- In a tortilla wrap – Fill a tortilla wrap with the cheesy taco rice mixture, fold, and enjoy.
- Over a salad – If you are looking for a healthier option try pouring the taco rice skillet over a bed or lettuce and top with mild or hot sauce.
